Extra Info:

Complexities of flavors in craft beers present themselves uniquely when slower consumption permits the ingredients to show their characters fully. Things that effect beer flavor: in other words-the things we focus on maintaining and improving in the WSBC Brewery every day. An organic and ever evolving list of goals/targets manipulated with our hands, technology, automation, mechanics, and sustainable practices.

  • Brewer techniques at time of ingredient coordination and combination/mixing for beer production

  • Water - pH, mineral content, municipal contributions
    (filtering/sanitizing for potable stability)

  • Beer brewing yeast strain

  • Fermentation Sugar sources
    (maltose, dextrose, fructose, Sucrose…)

  • Temperature
(mashing, boiling, fermentation, conditioning, serving, storing, consuming)

  • Oxidation - exposure to oxidative effects
    (reducing exposure to unfiltered/outside air)

  • Light - reducing exposure to light

  • Carbonation - amount of CO2 in solution and perceived on the palate at time of consumption

  • Serving/consumption vessel (glassware) shape/size influencing aromatic effect

  • pH – proper acidic range for safety & stability of beverage taste & shelf life

  • Proper equipment cleaning/sanitizing for beer/food consumption production

Belgo Golden Ale

Character from the Belgian yeast imparts sweet clove and mild warm fruit esters of subtle banana and lush red apple. An addition of Washington clover honey boosts the fermentable sugars and lightens the body lending balance to the finish.

OG: 14.5 / ABV: 5.8% / IBU: 22

3 Threads Porter

Brown porters are dark brown (may have red tint) in color. No roasted barley or strong burnt/black malt character should be evident. Moderate malt sweetness, caramel and chocolate notes with mild bitterness provide smooth drinkability for this darker style.

OG: 15.0 / ABV: 5.9% / IBU: 29

Wet Witty

A Belgian Style Wit Bier (White Ale), our “Witty” is brewed with malted wheat and caramelized wheat. A full-bodied, unfiltered Belgian ale spiced with additions of orange peel and coriander, acidulated malt provides lower pH levels creating a tart and dry character in the finish complementing the bright citrus fruit flavor.

OG: 11.5 / ABV: 4.5% / IBU: 15

Seven’s Stoot (Coffee Stout)

Seven Coffee Roasters of Seattle, WA provide freshly ground, sustainable, Guatemala Trapichitos Ixil A’Achimbal beans to Ian Thomas (our resident espresso king at WSBC). Ian extracts the beans’ oils and flavors using a cold-brew technique. After approximately 30 hours of extract time on the beans, the extract is blended w/ our Sounder Stout for an incredibly delicious coffee kick to our stout beer.

OG: 17.0 / ABV: 6.2% / IBU: 55

Faceplant Winter Ale

Big roasty, toasty malt additions combine with heavy high-alpha hop additions to yield a complex, drinkable, and formidable winter ale. This dark ale is sure to keep you warm all Winter long!

OG: 17.5 / ABV: 7.5% / IBU: 55

Westland Stout

Our Sounder Stout took a "magic carpet ride" for 100 days on some local whiskey wood from our friends at Westland Distillery! Enjoy slowly and savor the complex flavor maturing from roasted grains marrying with charred American oak, yielding rich vanillin and deep caramelized malts.

OG: 17.0 / ABV: 6.9% / IBU: 55

Alki Lumber Lager

All day, any time of day, this straw colored lager never fails to deliver the classic clean light beer quench when you need it. Light bodied, lightly hopped and oh so drinkable.

OG: 12.0 / ABV: 4.4% / IBU: 18

House IPA

Two (2) healthy pounds per barrel (31 gallons) provides moderately high hop bitterness, bold hop flavor, and penetrating hop aroma from start to finish. Caramelized malt barley lends color and sweetness in order to balance the aggressively hop forward style.

OG: 15.2 / ABV: 6.7% / IBU: 67

West Pale

An unfiltered and Dry Hopped American Style Pale Ale with resinous hop aroma from additions of Chinook and Willamette varieties. Horizon additions provide additional hop assertiveness and distinct bittering qualities.

OG: 13.0 / ABV: 5.4% / IBU: 42

Avalon Amber

Take Avalon Way to the top where it ends at WSBC and enjoy this smooth Amber Ale. The subtle hop addition with minimal bitterness allows the malt to shine with round caramel notes and sweet nuttiness. A soft finish raises the glass again and again.

OG: 14.0 / ABV: 5.6% / IBU: 25

Sounders Stout

Strong malt character in the form of alcohol, caramelized, roasty, rich, malty and full-bodied with heavy espresso-like aromas layered with chocolate covered raisins and hints of anise. Moderate bitterness contributions from the heavily roasted malts and hop additions balance the big rich body and malt character of the stout beer, and provides a smooth finish.

OG: 17.0 / ABV: 6.9% / IBU: 55

Triangle Tripel

Complex flavor driven by yeast, strong malt sweetness, and additions of raw sugar and honey malt lend smooth drinkability to this high alcohol, low bitterness beer. Fruity esters derived from the warm ale fermentation provides additional flavor profile.

OG: 20.5 / ABV: 8.2% / IBU: 25

Wieting Pilsner

Named after our Founder, Drew Locke’s Mother’s maiden name (his German side), traditional Saaz hops flavor this moderately bittered Bavarian classic. Crisp, dry mouthfeel is balanced by light spicy hop character elevating this lager style to its World renowned notoriety.

OG: 14.5 / ABV: 4.9% / IBU: 20
